Der Teran ist für ganz Istrien die wichtigste Rotweinsorte. Praktisch jeder Weinproduzent setzt auf diesen herbe, und fruchtbetonten Rotwein, der in unterschiedlichsten Qualitäten angeboten wird. Der istrische Teran ist ein enger Verwandter des Refosco, wie er im Friaul und in slowenisch-Istrien bekannt ist. Als Refošk gibt es diesen auch hier. Daneben werden Merlot, Cabernet und Syrah kultiviert, die oft auch als Cuvée mit dem Teran auftreten.
In der völlig eigenständigen Region Kvarner finden sich auch eigenständige Sorten. Bekanntester Rotwein ist der Sansigot, der eigentlich auf der Insel Susak seinen Ursprung hat. Auf der Insel Krk kommt er zu neuen Ehren, genauso wir der Trojščina, aus dem aber Rosé gemacht wird. Auf Krk und Pag werden aus Cabernet und Merlot meist Cuvées gemacht.
