Šoškić’s commitment to quality begins with the precise hand-harvesting of these carefully selected grapes, ensuring only the finest make it into Haiku. Upon arrival in the cellar, these grapes undergo spontaneous fermentation, allowing nature to take its course. Haiku5 then embarks on a maceration journey, spending 30 days—just like its predecessor—immersed in its own complexity, extracting depth and character from the grape skins. But the journey doesn’t end there: after maceration, Haiku5 matures and develops for two years in Tonneau barrels, absorbing delicate oak nuances while refining its harmonious aromas.
The grapes for Haiku are sourced from the Goričko vineyard, surrounded by the delicate beauty of Japanese cherry trees—a reflection that shines through in every sip.
Characterised by an orange, almost oily, deep and intense colour with vibrant reflections, the wine hints at a lively palate.
Renowned Croatian sommelier Mario Meštrović describes Haiku5 as a harmonious, delicious, and pleasurable wine: in the mouth, it offers pleasant freshness, excellent quality, a clear flavour profile, and wonderful balance. The palate is fruity with blood orange, mandarin, and beeswax notes. A sweet, lingering finish dominated by juicy orange. As the fine tannins fade on the tongue, a pleasant minerality lingers, enhancing the drinking experience.
The first, intense aroma bursts with the freshness of ripe mandarins, intertwined with the delicate scent of honeycomb. A pleasant fragrance of pollen from yellow spring flowers and honey follows. The aroma quality is excellent; after a few minutes, herbal notes such as dried thyme and dried oregano emerge.
Serve in a not-too-large tulip glass at 14°C to prevent the aromas from dissipating too quickly. Haiku5 is best enjoyed with medium to full-bodied foods rich in intramuscular fat. It arrives at the perfect drinking window and does not require decanting.
